The fifth edition of the festival dedicated to the king of cured meats — the Varzi DOP salami — awaits you in the magnificent historic village of Varzi, in the heart of Oltrepò Pavese. A not-to-be-missed event for curious visitors and lovers of fine food!
Tastings, workshops and roaming flavour trails through the Historic Wine Cellars and Castello Malaspina. Wander the medieval streets surrounded by outstanding salami and fine wine, discovering the authentic flavours of a tradition that has stood the test of time.
A full day of taste, tradition and culture
The medieval village of Varzi comes alive once again with the aromas and flavours of Oltrepò Pavese: on Sunday 7 June 2026, the Festival del Salame di Varzi DOP returns as one of the most unmissable events on the regional food and wine calendar.
The festival is promoted by the Consorzio di Tutela del Salame di Varzi DOP, with support from the Lombardia Style grant programme — Progetti di Promozione Unitaria per l'Attrattività Territoriale — funded by Regione Lombardia, and in collaboration with the Comune di Varzi.

The Festival celebrates a product that is far more than a cured meat: the Salame di Varzi DOP is a symbol of culture, artisan craftsmanship and a deep bond with its land of origin.

The Festival is also an invitation to discover Varzi and Oltrepò Pavese in their most authentic and immersive form — not just an opportunity to taste the Salame di Varzi DOP, but a chance to dive into a territory rich in history, natural beauty and agricultural passion.

On Sunday 7 June, as part of Che Salame! Il Varzi DOP – Festival del Salame di Varzi, join the Narrated Tastings: four guided sessions to explore the history, production, characteristics and different expressions of the Salame di Varzi DOP.
Places are limited: 30 participants per session.

12:30 PM Horizontal tasting of Salame di Varzi DOP across its three formats: salametto, filzetta and crespone. Wine pairing: Pinot Rosé DOC Oltrepò Pavese vivace.
2:00 PM Vertical tasting of hand-sewn (cucito) Salame di Varzi DOP at three different stages of ageing. Wine pairing: Spumante Metodo Classico DOC Oltrepò Pavese.
3:30 PM Horizontal tasting of Salame di Varzi DOP across its three formats: salametto, filzetta and crespone. Wine pairing: Moscato dell'Oltrepò Pavese.
