Monte Isola salami
From Clusane to Sulzano and from fish to meat. This is the perfect spot to learn about the production of cured meats in the Lake Iseo area, which includes traditional specialities with unique, intense and distinctive flavours.
One of the most renowned delicacies is Monte Isola salami, a product that embodies the area's ancient peasant traditions, prepared with care using a specific method.
The preparation process has remained the same over the years: the pork is chopped with a knife to preserve its aroma, and then combined with garlic, salt, spices and wine. The mixture is then stuffed into natural casings, tied and hung in a room known as the "cà del salam", a cellar with stone walls, where it is smoked overnight in a fireplace with juniper wood. It is left to age for at least a month before consumption.
This long and traditional process imbues the product with so much care and passion that you can actually taste it!
