As a result, Expocasearia, the Show especially dedicated to equipment, production and marketing systems for milk and dairy products (cheese but also yoghurt and ice-cream), never stops growing in importance. The exhibit area features every year the leading companies of the sector offering the best of small-scale processing technologies, the true added value of milk production chain (cow, goat, sheep and buffalo). A wide range of machinery and equipment are on display, but the most striking items are undoubtedly mini dairies: the protagonists of a growing trend that is involving restaurant service as well. More and more restaurants all over Italy are in fact now equipped with small production labs.
