The province's traditional cuisine can be defined as based on popular recipes using local produce, hearty tastes that were later refined at the court of the Gonzaga Family.

Wild herbs are often used to season bread dumplings called capunsei or to add flavoring to egg frittatas and savory crepes.

Tortelli di zucca — Questa prelibatezza autunnale è il vero vanto della città dei Gonzaga. La ricetta tradizionale è stata codificata già nel Rinascimento, secondo il gusto dell’epoca. Il sapore ricco e agrodolce dipende dal ripieno di zucca accompagnato agli amaretti e alla mostarda di pere. Una spolverata di formaggio aggiunge al piatto una tonalità salata.

Capunsei — I capunsei sono gnocchetti di pane dalla forma cilindrica e affusolata conditi con burro, salvia e formaggio. Tipico piatto della tradizione contadina, povero ma sostanzioso, prevede nella preparazione il riutilizzo del pane raffermo grattugiato. Può essere anche servito in brodo e presentare varianti da una località all’altra dell’Alto Mantovano.

Risotto alla pilota — Deve il suo nome agli operai addetti alla pilatura, ovvero l’operazione di sbucciatura e pulitura del riso. A caratterizzare il piatto è la sua particolare cottura che, a differenza del comune risotto, lo rende asciutto e sgranato. Alla fine, viene condito con salsiccia, burro e formaggio grattugiato.

Stracotto d'asino — Ecco un piatto da servire nelle fredde domeniche invernali, meglio se accompagnato dalla polenta. La sua preparazione inizia il giorno prima. Bisogna infatti marinare a lungo la carne d’asino, per ammorbidirla ed evitare che il sapore sia troppo intenso.

Bollito misto di carne — Come lo stracotto d’asino, anche il bollito misto richiede lunghi tempi di cottura. Tradizionalmente, i pezzi utilizzati sono lingua, testina, muscolo, guancia e cappello del prete. Si raccomanda di non sgrassare la carne e di accompagnare questo assortimento con mostarda o salsa verde.

Luccio in salsa — Il luccio è il tipico pesce dei corsi d’acqua mantovani. Il piatto è antico e ha origine popolare. Secondo la ricetta tradizionale, il luccio viene bollito e insaporito da una salsa a base di capperi, vino e verdure. Di solito è abbinato alla polenta.

Pescegatto — Piatto tipico della Bassa e in particolare delle località più prossime al Po’. In Lombardia si cucina pressoché da queste parti. Simile all’anguilla, è un pesce saporito dalla carne bianca e polposa. Si può preparare fritto o in umido. Chi vuole assaggiarlo, può approfittare della Festa del Pescegatto che si svolge tutti gli anni a Dossolo (MB).

Mostarda — È un prodotto culinario mantovano, ma tipico anche di altre zone d’Italia. Si tratta di conserve di frutta trattata, con zucchero o miele, mosto o senape. Caratterizzate da un gusto deciso, da abbinare a piatti salati. Si sposa bene con il bollito di carne.

Salsa verde — Anche la salsa verde è un accompagnamento ideale per il bollito, soprattutto per i pezzi più stopposi. Con il suo mix di aglio, acciughe e prezzemolo restituisce alla carne un sapore ancora delizioso

Sbrisolona — Il suo nome deriva dal mantovano “brisa” che significa “briciola”. La ricetta anche in questo caso è molto antica e risale all’epoca dei Gonzaga. È una torta dura e friabile caratterizzata da grosse briciole croccanti e pezzi di mandorla.

Sugolo — Delizioso budino realizzato anticamente con l’uva scartata dalla vendemmia, perché rovinata all’esterno. E’ un dolce molto semplice: oltre al succo d’uva, si utilizza zucchero e farina. Si gusta da solo o insieme alla torta sbrisolona.

Torta di tagliatelle — Dolce a base di pasta frolla, un ripieno di mandorle, cedro candito, zucchero e liquore e una copertura di tagliatelle all’uovo. Queste ultime diventano croccanti dopo la cottura al forno. Da servire durante le feste di Natale o a Pasqua.
